Cough Cake

We affectionately call this Cough Cake in our house as it contains ingredients thought to soothe coughs.

My photos don’t do the cake justice, it really is Autumn on a plate.  Oven temperatures vary, but to get the range of colours from yellow to orange to pink, you will need a hotter oven so the cake bursts through the crust rather than a lower temp that gives an even rise.  Adjust your oven temp accordingly.

 



Ingredients

300g plain flour                                                                                        Icing ingredients

200g caster sugar                                                                                     60g butter

150g butter                                                                                                 50g honey

2 large eggs                                                                                                120g icing sugar

3 tsp turmeric                                                                                            2 tbsp double cream

1.5 tsp baking powder

.5 tsp bicarbonate of soda

200ml coconut milk

zest of an orange







Method

  1. Grease and flour two 8″ (20cm) cake tins. Turn oven to 190c
  2. Whisk sugar, butter and eggs until fluffy
  3. Sift in half the flour, stir gently
  4. Add coconut milk and orange zest, stir gently
  5. Sift in remaining flour, turmeric, baking powder and bicarbonate of soda. Stir gently
  6. Pour into prepared tins and bake 25-30mins. The tops should be cracked and spingy to touch
  7. Cool both cakes on a wire rack while making the icing
  8. Whisk butter, honey and cream. Add icing sugar a spoonful at a time until smooth
  9. Slice the top off one cake (chef’s bonus), cover with almost half the icing
  10. Place the second cake on top and cover with remaining icing
