Opening Day Flapjacks

 This is the recipe for the flapjacks which we made to celebrate the opening of Another Weigh. The dry ingredients can be bought in the shop – just remember to bring your own containers.

 

Ingredients

  • 350 g porridge oats
  • 80 g plain flour
  • 100 g any nuts roughly chopped
  • 200 g any dried fruit, larger pieces roughly chopped
  • 50 g seeds – try a mixture of sunflower, pumpkin and sesame
  • 200 g butter or margarine
  • 175 g  golden syrup
  • 200 g light brown soft sugar

 

Instructions

  1. Preheat the oven to 160C/325F/gas mark 3. Grease and line a 23cm/9in square cake tin.
  2. Mix together the oats, flour, nuts, fruit and seeds in a large bowl.
  3. Put the butter, golden syrup and brown sugar in a pan over a low heat. Heat, stirring occasionally, until melted.
  4. Pour the syrup into the oats and stir until mixed.
  5. Tip the mixture into the prepared tin, spread it out and press down firmly until well compacted.
  6. Bake for 25-35 minutes until set and golden (they will still be a little soft to the touch and will firm up a lot as they cool).
  7. Leave to cool for 10 minutes then cut into squares with a sharp knife while still in the tin.
